I am from Southern Germany and made and ate Spaetzle all the time. The best and real Spaetzle are made by hand. I have been looking for these for a long time. We used Gouda (old and new) and nettle cheese and carmelized onions to make a volcano looking tower, built in layers with the onions on top, then baked. So good. Learned from a German family while visiting years ago. Can't wait to get some more.
These are great with a little butter and some parsley added. We usually serve them with Hungarian Goulash.
