It is a good start; but when you add some Kuemmel - caraway seed to us in Amerika - and a little kirsch it gets to be GREAT! Don't get carried away with the schnaps! Fry up some pork chops and dump the sauerkraut and caraway into the fat add water to cover, top off with a half shot of Kirsch and simmer until meat is tender. Yukon mashed potatoes with European style butter, salt, pepper. Hmmmm. Now, while you wait, you get to taste test the Kirsch a few times. Wunderbar, so wie aus Oma's Kueche.

Absolutely the best Sauerkraut I have had in the U.S.; only better or equal when I lived in Germany. The flavor is so bright, full, yet mild, without that awful sulfide taste found in US Krauts, canned or refrigerated.Texture is firm, but soft w/o hard stems, light, and not waterlogged. I'm telling you, it adds a whole new dimension to your favorite Kosher Hot Dog, Polish Sausage, anything. Just perfect!
