Lived in Munich for years and was treated to a variety of Black Forest hams, each with subtle taste differences from different makers. This hits you over the head wit SALT before any taste of ham comes through. Dry—much drier than it should be.. but the worst is the odd off-taste in the smoke. It tastes like it was dipped in Liquid Smoke rather than slowly and carefully cold-smoked. Just all around a miss. Change suppliers!!!

Storage InformationWill keep without freezing; it will only air dry in refrigerator. Hams need air circulation, and keep best when wrapped in paper towel. Otherwise, leave unopened in vacuum-sealed packaging. Should vacuum packaging become loose—indicating an air leak—remove immediately and wrap in paper towel. Once open, it will stay fresh for up to 8 weeks. Can also be frozen for up to 2 months. Defrost slowly in refrigerator; once thawed, ham will stay fresh for up to 8 weeks.

I've never actually ordered this, but IT IT SUPPOSED TO BE SALTY. And it also is NOT SUPPOSED to have a lot of fat on the bottom. I'm from there and it's not prosciutto ...
Some people say it's salty, but that's what I love about this dried-cured specialty. I just don't get it. Cured hams that taste like nothing are pointless IMHO. The saltiness is part of why it's good. My cheap deli-slicer works well and I slice off just what I need. It's a treat for me, so I make it last.
Way too salty, I will never buy it again. I know that this kind of Schinken has to be sliced paper thin which we did. I have a lot of experience with Perscutto de Parma , Serano and other smoked or cured hams from many counties. My family loves them all but this was not what I hoped for. I am trying to use it in some cooking, but my God what a waste.

If you want a Ham that is mild in flavor you should not buy a Black Forest Ham.

Maybe it is just how the smoky and salty flavor compliments German BIER (LOL) but I simply love this stuff. Had to buy a slicer but it was worth it because now I can slice SCHINKEN, coldcuts, and German bread with the same machine. WINNING!!!! By the way, I slice the entire piece of ham and then I put it into serving size freezer baggies. I wasn't sure if that would work, but so far, so good. Try and keep the slices loose of put some parchment paper between the slices or you will find it a bit difficult to separate the slices. It's worth the extra time. Biggest problem for me is not to pull out a serving size baggie out of the freezer every time I want a German BIER!!!!! ha ha
I received this ham.Did not have any fat on bottom like it suppose to have and it is to salty. Will never buy from Stiglmeier again.Had Abrahams ham and it was excellent. I was 33 years in Germany, I know how it should taste. Not like a salt block. Hope I can use it for cooking.
Just as good as any Black Forest Schinken I ever purchased in Germany. The flavor is excellent and it was still tender and easy to eat on German Brot or Brötchen.
