Storage Information

Will keep without freezing; it will only air dry in refrigerator. Hams need air circulation, and keep best when wrapped in paper towel. Otherwise, leave unopened in vacuum-sealed packaging. Should vacuum packaging become loose—indicating an air leak—remove immediately and wrap in paper towel. Once open, it will stay fresh for up to 8 weeks. Can also be frozen for up to 2 months. Defrost slowly in refrigerator; once thawed, ham will stay fresh for up to 8 weeks.

Moister and Milder than B.F. but still SEHR GUT!

Speaking of "gut" I better watch out or my BIER-belly is going to be out of control. Ha Ha!
Anyway, this schinken is not quite as salty or smoky-tasting as the Black Forest schinken and it is a bit more moist. Still good but a lot more subtle that the B.F., IMHO. I bought an electric food slicer from Cabela's because you HAVE to slice this schinken and the other one paper thin. If the slices are too thick then they are too chewy. I slice up the entire piece of ham and then pack them loosely into a freezer baggy. If you squash the slices together, they will be hard to separate once you thaw them out. Another method is to separate the slices between parchment paper before you bag them into portions and freeze them. One more tip. These ham slices are really good when wrapped around cantelope slices for an appetizer.

Wonderful flavor

Just bought this ham the first time. It is nicely smoked and has a wonderful flavor. I haven't had a Ham that good since the last time I was in Germany .
The trick is to slice this Ham very thin and I personally like it on a Bauernbrot with Horseradish. Very very good!
