| Siegi's Eisbein This classic German delicacy takes the traditional Schweinehaxe up another notch. Our butchers process the ham shanks in a salt brine for two weeks to bring out the rich flavors of the meat. The meat is much saltier than Schweinehaxe. Prepare as you would traditional Schweinehaxe. Use your rotisserie or oven to achieve the classic flavor of juicy, salty pork, encased in crispy skin. Or use another favorite family method for cooking this German favorite. Each piece weighs about 3 pounds. Each Haxe makes a very generous meal for one. Roast or cook the meat until the internal temperature at its thickest point is at least 160ºF.
