Potato Croquettes
(Kartoffel Kroketten)

2 boxes Dr. Knoll Kartoffelteig
4 cups water
4 eggs
Salt and pepper to taste
1-½ cups cooked chicken, chopped
1 tablespoon fresh parsley, chopped
2 eggs slightly beaten
flour
bread crumbs

Combine the eggs and water in a bowl.  Fold the contents of the pouches into the liquid and let thicken for 10 minutes.  Place half of the mixture into a piping bag with a large round tip.  Squeeze a long band of the mixture onto a floured board. 

Mix the chicken into the remainder of the mixture.  Add 1-tablespoon fresh parsley and mix well.  Place the mixture into the piping bag and squeeze a long band of the mixture onto a floured board.  Refrigerate for 1 hour.  Cut bands into 2 inch pieces and dredge in egg, flour, and bread crumbs.  Deep fry until golden brown. 

Potato Pancakes
(Kartoffelpuffer)

Use Dr. Knoll Kartoffelpuffer Mix or your favorite brand. Prepare according to package instructions.

Creamy Topping

Mix 1/4 cup sour cream with 1 package of your favorite Brunch cheese spread

Cherry Tomato Salad

Slice cherry tomatoes in half and mix with 1 package Knorr Salat Krönung (prepared according to package instructions.) Our staff loves the Balsamico-Kräuter Mix with tomatoes!  Garnish with fresh rucola lettuce.
