Quick and Easy serving suggestions:
Defrost the breast in the refrigerator. Do not cook it at all. Slice into thin slices, cutting against the grain (as shown in the photo). The slices must be very thin or the meat will be too tough. Serve with a hearty cracker, pumpernickel bread, or slices of baguette. The cold slices are great with horseradish slices, prepared horseradish cream, or spicy mustard.
This next option is a bit more Effort:
Put the breast into a pot with a lid. Cover the breast with duck or goose fat and put the lid on the pot. Cook very, very slowly for several hours in an oven set to about 200-degrees F. Remove the goose breast from the fat, You can freeze the fat to be used again. Cool the goose breast (tightly-wrapped) in the refrigerator. Slice the meat, which will be very tender, and serve with bread or crackers.

Taste makes up for deceptive photos

The photos show that the meat is sliced. Not so - it comes as a solid piece of breast meat, so sharpen up your carving skills. It'll be worth it, though. The taste is fantastic if you slice it thin. It's sort of like a cross between bacon and smoked chicken, with a little something extra that makes it great. Highly recommended, as long as you have a good slicing knife.
