Baking Instructions

All ingredients must be at least at room temperature.

Add 15fl.oz (about 2 cups) of warm water in a pre-warmed mixing bowl. Mix the Seitenbacher baking yeast (both packages) with a teaspoon of sugar or honey and let rest a few minutes until the yeast begins to foam.

Kneat the sourdough bag (both packages) before opening. Mix briefly with yeast mixture.

Warning: Do not add more salt because the flour mixture has been flavored with sea salt. The onions are also included in the flour mixture.

Knead the dough with an electric mixer with dough hooks, food processor or with hands until smooth.

The longer the kneading time, the better the pore structure.

Cover the bowl with a damp cloth and put in a warm place for approx. 10-20 min.

Meanwhile grease 2 loaf pans.

Knead dough again and fill into baking molds to about half full.

Again, cover and let rise in a warm place until the dough volume has almost doubled (about 30 min.).

Meanwhile pre-heat oven to 428F.

For a crispy crust add a shallow bowl with hot water in the oven and leave in the oven during the baking process.

Bake about 15min. at 428C on middle rack, then lower temp to 356F and bake for approx. 45min. more. 

Baking times vary, depending on oven.

Take breads out of the mold, brush with water and continue baking for 10 more minutes.

Let cool on wire rack.

For bread machines:

Full package makes about 45.85oz of bread.

Fill bread machine with 15oz (about 2 cups) luke-warm water.

Add sourdough to the water and stir. Pour flour mixture over water and at last the dry yeast mixture with sugar.

Set bread machine to normal and dark crust.

Baking time for sourdough breads should be 60-75 min.

Bread machine programs vary depending on model. May need to bake another 10-20 minutes.
