Bought this for the first time and liked it overall - the texture is good and you can taste the garlic. I think it needs some acidity, maybe a little vinegar in the mix. I cut it up and added my own vinegar, which made it taste perfect.

Head Cheese is available in the stores where I live but the textures are more of a gel and pre-sliced. Most has a little too much red pepper for my taste. Stiglmeir has actual pieces of meat that is held together with the cheese like gel.. It can be sliced to the thickness you prefer and while it has a slight bite of pepper it's not too much. Seasonings can always be added but once something is too hot, it's just too hot. This is the best head cheese I have ever had!
